Ingredients

for 6 servings

  • 1 750-ml bottle of red wine
  • 1 whole cinnamon stick
  • 5 whole cloves
  • 3 whole star anise pods
  • ¾ cup sugar
  • 1 blood orange, sliced
  • 6 Bosc pears, peeled

For Serving

  • 1 pt vanilla ice cream
  • ¼ cup crushed pistachios

Preparation

  1. Add the wine, cinnamon stick, cloves, star anise pods, sliced orange, and sugar to a medium pot.
  2. Place the pears in the pot. Bring to a boil over medium heat, then reduce the heat to medium-low and simmer, turning the pears as needed to submerge evenly, until they absorb the poaching liquid, about 15 minutes.
  3. Remove the pears from the poaching liquid and place upright on a plate. Transfer to the refrigerator to cool for 5-10 minutes.
  4. Meanwhile, continue to reduce the poaching liquid over medium-low heat for about 5 minutes, or until thickened to your liking.
  5. Place each pear in a shallow serving dish, along with a scoop of ice cream, a drizzle of the reduced poaching liquid, and a sprinkle of crushed pistachios.
