Coconut Pancake

Ingredients

for 2 servings

  • ¼ cup coconut flour (60 g)
  • 1 ¼ oz wheat flour (35 g)
  • 1 ¼ oz coconut flakes (20 g)
  • ¾ teaspoon baking powder
  • 1 pinch salt
  • ½ cup coconut milk (100 mL)
  • 2 tablespoons coconut liqueur
  • 1 drop almond essence
  • 2 eggs
  • ¼ cup sugar (65 g)
  • 1 oz butter (30 g)

For the frying:

  • 1 tablespoon butter

To serve:

  • cinnamon
  • powdered sugar
  • coconut icecream, if desired

Preparation

  1. Mix the coconut milk with the coconut liqueur in a cup, and in a separate medium bowl, mix the dry ingredients.
  2. Melt the butter, add to the coconut milk mixture, and microwave thoroughly. Mix well.
  3. Preheat the oven to 200°C. Meanwhile, heat a frying pan on the stove and add 1 tbsp butter.
  4. Fill the pan with batter, fry for 3-4 minutes, then place in the oven.
  5. Bake for 10 minutes.
  6. Retrieve from oven, plate, and serve with cinnamon, powdered sugar, and coconut ice cream if desired.
