Adaptogenic Maple Oats

Ingredients

for 1 serving

  • ½ cup rolled oats (45 g)
  • 1 cup milk (240 mL)
  • 1 cup water (240 mL)
  • 1 tablespoon chia seeds
  • 1 tablespoon toasted flaked almonds
  • 1 teaspoon bee pollen
  • 1 teaspoon lions mane mushroom powder
  • 1 tablespoon coconut oil
  • 1 tablespoon maple syrup

Preparation

  1. In a small saucepan over low heat, combine the oats and chia seeds with ½ cup (115ml) boiling water and the milk or plant-based milk. Cook for 10 minutes, stirring constantly.
  2. Remove the saucepan from the heat and stir in the toasted almonds, bee pollen (if using), mushroom powder, coconut oil and maple syrup to taste.
  3. Pour into a serving bowl and top with additional flaked almonds, chia seeds and a drizzle of maple syrup.
