Ingredients

for 4 servings

  • 1 watermelon, sliced into 1-in (2.5-cm) slabs
  • 2 cups sugar (400 g)
  • 1 cup water (240 mL)

Preparation

  1. Use small cookie cutters to punch out shapes from the watermelon flesh, or use a knife to cut into small squares or your desired shapes.
  2. Prepare an ice bath in a medium bowl.
  3. In a medium nonstick pan, combine the sugar and water. Melt together over medium heat and continue cooking until the temperature reaches 300°F (150°C).
  4. Secure a watermelon shape onto a heat-safe skewer. Dip the skewer into the hot sugar mixture to coat the watermelon evenly, then immediately dunk in the ice bath; the sugar should harden and turn glossy on the outside of the fruit. Repeat with the remaining watermelon.
  5. Serve immediately.
