Ingredients
for 4 servings
- 1 watermelon, sliced into 1-in (2.5-cm) slabs
- 2 cups sugar (400 g)
- 1 cup water (240 mL)

Preparation
- Use small cookie cutters to punch out shapes from the watermelon flesh, or use a knife to cut into small squares or your desired shapes.
- Prepare an ice bath in a medium bowl.
- In a medium nonstick pan, combine the sugar and water. Melt together over medium heat and continue cooking until the temperature reaches 300°F (150°C).
- Secure a watermelon shape onto a heat-safe skewer. Dip the skewer into the hot sugar mixture to coat the watermelon evenly, then immediately dunk in the ice bath; the sugar should harden and turn glossy on the outside of the fruit. Repeat with the remaining watermelon.
- Serve immediately.
