for 8 sfogliatines
- 1 sheet frozen puff pastry, thawed
- ¾ cup confectioners' sugar
- 15 g egg whites (15 g), (about 1/2 egg white)
- 3 tablespoons apricot jam

Preparation
- Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.
- Lay the puff pastry on a lightly floured surface and cut into 8 equal rectangles (about 1¼ x 4-inches). Arrange on the prepared baking sheet, leaving space between.
- In a medium bowl, sift the confectioners' sugar to remove any clumps. Add the egg whites and mix until icing is well combined.
- Brush the top of each pastry evenly with the icing.
- In a small bowl, strain the jam to remove any lumps. Transfer to a piping bag. Pipe Xs on top of the icing to create a pattern.
- Bake for 20 minutes, or until golden brown and crispy. Remove from the oven and let cool completely.
