Pecan Date Bark

This isn’t your typical chocolate bark! It has a layer of flattened dates, plus layers of peanut butter and pecans for the perfect sweet and salty snack.

Ingredients

for 12 pieces

  • 12 oz pitted dates
  • 1 ¼ cups peanut butter
  • 7 oz dark chocolate
  • 1 teaspoon coconut oil
  • ½ teaspoon flaky sea salt
  • 3 ½ oz pecan halves

Preparation

  1. Split each pitted date in half lengthwise, then spread the halves open to flatten. Arrange the dates on a parchment-lined cutting board or platter in a square shape, insides facing up, making sure the halves are touching or slightly overlapping. Cover the dates with another sheet of parchment paper and use a rolling pin to roll over the dates with medium pressure a few times to flatten further. Carefully peel off the top layer of parchment and discard.
  2. Spread the peanut butter evenly over the flattened date square.
  3. Add the dark chocolate and coconut oil to a medium, microwave-safe bowl. Melt in the microwave in 30-second intervals, stirring between, until smooth. Let the melted chocolate cool for 8-10 minutes, stirring occasionally, until it begins to thicken and is less runny and more spreadable.
  4. Spread the chocolate carefully over the peanut butter layer, then sprinkle with the flaky sea salt. Arrange the pecan halves on top of the chocolate in a single layer.
  5. Place the date bark in the refrigerator for at least 1 hour, until the chocolate has completely hardened.
  6. Slice or break the bark apart into 12 pieces. Serve immediately or store in the refrigerator until ready to serve.
