Mini Peanut Butter Cheesecakes

Ingredients

for 12 mini cheesecakes

  • 24 ritz crackers
  • 16 oz
    cream cheese (450 g)
  • ½ cup
    sugar (100 g)
  • ½ cup
    peanut butter (120 g)
  • ½ cup
    sour cream (115 g)
  • 1 teaspoon
    vanilla
  • 2 eggs

Preparation

  1. Form peanut butter sandwiches with Ritz crackers.
  2. Place them in the bottom of each cup of a muffin tin.
  3. In a large bowl beat together cream cheese and sugar.
  4. Then add peanut butter, sour cream, vanilla, 2 eggs, and beat again.
  5. Pour mixture over each peanut butter sandwich until each cup is ¾ full.
  6. Top with crushed Ritz cracker.
  7. Bake for 22 minutes at 275°F (135°C). Let cool completely and then refrigerate 2 hours.
  8. Enjoy!
