Ingredients

for 1 serving

  • ½ cup
    rice (100 g)
  • 1 cup
    water (470 mL)
  • 1 teaspoon
    olive oil
  • ¼ cup
    black beans (40 g)
  • ¼ cup
    tomato, chopped (50 g)
  • salt, to taste
  • pepper, to taste
  • ½ avocado, chopped
  • fresh cilantro, to serve

Preparation

  1. In a bowl, combine the rice, water, and olive oil.
  2. Stir, then microwave, covered, for 6-8 minutes until the rice is fully cooked.
  3. Carefully remove the lid, then add black beans, tomatoes, salt, and pepper. Stir to combine.
  4. Top with avocado and cilantro if desired.
  5. Enjoy!
