Loaded Sweet Potato

Ingredients

for 1 serving

  • 1 large sweet potato
  • ¾ cup
    black beans, drained and rinsed (125 g)
  • 1 cup
    broccoli, steamed (150 g)
  • ½ cup
    corn (175 g)
  • 2 tablespoons
    guacamole
  • ½ cup
    tomato, diced (100 g)
  • fresh cilantro, to taste

Preparation

Under 30 min

  1. Pierce air sweet potato with a fork and microwave on high for 9-12 minutes until fully cooked.
  2. Top with black beans, broccoli, corn, guacamole, tomatoes, and cilantro.
  3. Enjoy!
