Ingredients

Meatballs

  • 1 lb ground beef (455 g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • neutral oil, as needed

Soup

  • 2 carrots, diced
  • 1 celery, diced
  • 1 can diced tomatoes
  • ½ cup vegetable stock (120 mL)
  • ½ cup alphabet pasta (100 g), or any pasta of your choice, cooked
  • cheese, to taste, optional

Preparation

  1. Make the meatballs: In a large bowl, combine the ground beef, garlic powder, onion powder, salt, and pepper. Mix gently with your hands until just combined.
  2. Roll the meat mixture into small balls, then pan-sear in a large pot with a drizzle of oil until the meatballs have a dark brown crust, about 2 minutes per side. Remove the meatballs from the pot and set aside.
  3. Add the carrot, celery, and tomatoes the same pot. Cover and cook for 20 minutes, or until the vegetables are tender.
  4. Use an immersion blender to purée the vegetables until smooth.
  5. Add the vegetable stock, pasta, and meatballs to the pot, cover, and simmer for 5 minutes.
