Healthy Veggies and Couscous

Ingredients

for 4 servings

Vegetables

  • 2 potatoes
  • ½ head broccoli
  • 1 red bell pepper
  • 1 tablespoon
    garlic powder
  • 1 tablespoon
    dried parsley
  • 1 teaspoon
    salt
  • 1 teaspoon
    pepper
  • 2 tablespoons
    olive oil
  • ½ cup
    parmesan cheese (50 g)

Couscous

  • 1 cup
    couscous, cooked (150 g)
  • 1 tablespoon
    olive oil

Preparation

  1. Lay out the potatoes, broccoli florets, and red pepper on a baking tray.
  2. Coat with the garlic powder, parsley, salt, pepper, and olive oil and mix together.
  3. Bake in the oven for 25 minutes at 350˚F (180°C).
  4. Coat with the parmesan.
  5. Mix together with the cooked couscous and olive oil.
  6. Enjoy!
