Egg Cups

Ingredients

for 4 servings

  • 5 eggs
  • salt, to taste
  • pepper, to taste

Mix and Match Fillings

  • spinach
  • tomato, diced
  • broccoli, cut into small florets
  • shredded cheddar cheese
  • bell pepper, diced
  • onion, diced
  • mushroom, sliced
  • asparagus, diced
  • bacon, cooked and chopped

Preparation

  1. Preheat oven to 350˚F (180˚C).
  2. Fill a greased muffin tin with your favorite combination of fillings or use the ones we did!
  3. Whisk eggs in measuring cup and fill up each tin.
  4. Sprinkle with salt and pepper.
  5. Bake for about 30 minutes or until a toothpick comes out clean.
  6. Enjoy!
