Ingredients

for 2 servings

  • ¼ cup aquafaba (60 mL), canned chickpea liquid
  • 2 tablespoons granulated sugar
  • 2 tablespoons finely ground freeze dried strawberries
  • strawberry jam, for serving
  • whole milk, for serving

Preparation

  1. In a medium bowl, whip the aquafaba with an electric hand mixer until foamy and stiff peaks form, 2–3 minutes. Add the sugar and whip for another 30 seconds. Finally, add 2 tablespoons of the strawberry powder and whip again for another 30 seconds, until well incorporated.
  2. Add a large spoonful of strawberry jam, if using, to the bottom of a tall glass. Fill the glass ¾ of the way with milk. Spoon the whipped strawberry topping on top and serve, stirring to combine.
  3. Enjoy!
  4. Note: To make the freeze-dried strawberry powder, add the strawberries to a food processor or spice grinder and process until finely ground. The strawberry powder will keep in an airtight container for up to 1 month.
