Colombian Breakfast Soup (Changua)

Ingredients

for 4 servings

  • 2 cups
    water (470 mL)
  • 2 cups
    milk (470 mL)
  • 4 eggs
  • 4 green onions, chopped
  • 5 cherry tomatoes, chopped
  • 1 handful fresh cilantro, for garnish
  • salt, to taste

Preparation

Under 30 min

  1. Heat water and milk in a pot over medium heat.
  2. Bring to a boil and add 4 eggs.
  3. Without stirring, add green onions and tomatoes. Let eggs cook for about 5 minutes, or until the egg yolks are just barely firm.
  4. Salt to taste (optional).
  5. Serve one egg per bowl and add broth. Garnish with cilantro and use bread to dip - we used sourdough, but any bread will do.
  6. Enjoy!
