Berry Almond Oatmeal Bake

Ingredients

for 4 servings

  • 2 cups
    milk (470 mL)
  • 2 eggs
  • 1 tablespoon
    vanilla extract
  • 1 tablespoon
    butter, melted
  • 2 cups
    quick-cook oats (200 g)
  • 2 tablespoons
    brown sugar
  • 1 teaspoon
    cinnamon
  • 1 teaspoon
    baking powder
  • ½ teaspoon
    salt
  • 2 cups
    mixed berries, divided (200 g)
  • ½ cup
    sliced almonds (20 g)
  • honey, as needed

Preparation

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk wet ingredients until combined.
  3. In a separate bowl, combine dry ingredients.
  4. Spread 1 cup (100 grams) of berries over the bottom of an 8x8 inch (20x20 cm) glass baking dish. Add dry mixture, then wet mixture, then the remaining berries. Top with sliced almonds.
  5. Bake 40-45 minutes, or until a knife inserted into the center comes out clean.
  6. Top with honey.
  7. Enjoy!
