Bell Pepper Pumpkins

Ingredients

for 1 bell pepper pumpkin

  • 3 bell peppers, different colors
  • ranch dressing, to serve

Preparation

Under 30 min

  1. Cut top of 1 bell pepper off and deseed and destem the inside.
  2. Using the tip of a small knife, cut out a jack o’ lantern face into the side of the bell pepper.
  3. Stand the bell pepper up and fill with slices of the other two bell peppers or other vegetables.
  4. Serve with ranch.
  5. Enjoy!
