- 2 cups spinach
- ⅓ cup extra virgin olive oil, plus more as needed
- ¼ teaspoon freshly ground black pepper, plus more to taste
- ⅛ teaspoon salt
- 1 (5.2-ounce) package Boursin, Garlic and Fine Herbs
- 10 oz pasta of choice
- 3 tablespoons chopped fresh basil
- 2 garlic cloves, minced
- 1 ½ teaspoons chopped chives

Preparation
- Preheat the oven to 400°F (200°C).
- In a large baking dish, add the tomatoes, spinach, and olive oil. Season with pepper and salt, then toss until evenly coated. Form a well in the center.
- Place the Boursin in the well; drizzle with more olive oil and season with black pepper.
- Bake for 20-25 minutes, until the tomatoes are roasted, the spinach is wilted, and the cheese is melted.
- Meanwhile, in a large pot, bring salted water to a boil. Add the pasta and cook until al dente, according to package directions. Drain and set aside.
