Artichoke Spin Dip Pasta

A simple version of artichoke spinach dip is turned into a sauce and tossed with hot pasta. Boursin and mozzarella make this dish super creamy, cheesy, and delicious!

Ingredients

for 4 servings

  • 8 oz pasta of choice
  • 2 tablespoons olive oil
  • 3 green onions, chopped
  • 4 garlic cloves, grated
  • ¼ teaspoon crushed red chile flakes
  • 1 cup artichoke hearts, chopped
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 12 oz baby spinach
  • 1 (5.2-ounce) package Boursin, Garlic and Fine Herbs
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter

Preparation

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions.
  2. While the pasta is cooking, in a large pan over medium-low heat, add the olive oil. Add the green onions and cook in the hot oil, stirring occasionally, until soft, about 5 minutes. Add the garlic and red chili flakes; cook for 2-3 minutes, until fragrant.
  3. Increase heat to medium. Add the artichokes to the pan and season with salt and pepper. Cook for 1 minute. Add the spinach and cook for 2-3 minutes, until wilted. Add the Boursin and cook until the cheese is melted.
  4. Strain the pasta, reserving 1-2 cups pasta water.
  5. Add ½ cup pasta water to the artichoke-spinach mixture in the pan. Stir until the sauce is creamy. Add another ½ cup pasta water; mix well.
  6. Add the mozzarella cheese and butter; stir until well combined. Check for seasoning, adjusting the salt and pepper as needed. Adjust consistency with more pasta water if needed.
  7. Add the pasta to the pan and mix until evenly coated with the sauce.
